This is a savoury cake/bread made from cassava flour (ground cassava meal). It is consumed as a snack and used as an accompaniments to dishes like
Burundi brocchettes. Cassava flour can be hard to find... if you can't get it directly buy gari and render to a powder in a food processor.
Ingredients:
180g Cassava Flour
3 tsp Baking Powder
5 large Eggs
60ml red palm oil (or peanut oil)
60ml Lukewarm Water
1 tsp Salt
1 tsp Garlic Powder
1 tsp mixed dried herbs (eg Italian Dried Herbs or herbes au Provence)
Method:
Pre-heat your oven to 180°C. Line a 13 x 22cm loaf tin with lightly-greased parchment paper then set aside until needed.
Combine the eggs, oil and water in a large mixing bowl, beating thoroughly to combine. Now beat with a stick blender until pale, light and fluffy.
Using a spatula fold in the dry ingredients, salt and spices/herbs. The final batter will be thin and runny... which is what you want.
Pour the batter into the prepared loaf tin then transfer to the centre of your pre-heated oven and bake for 40-45 minutes, or until golden brown on top and a pick inserted in the centre emerges cleanly.
Transfer to a wire rack and allow to cool in the tin for 30 minutes. At this point, turn the cake out of the tin and allow to cool completely before slicing and serving.
