Brochettes (kebabs) are a common street food in Burundi that are typically made from goat meat or chicken. They are often served with fried plantains or on a bed of pounded banana..

Ingredients:

400g cubed goat meat (or chicken)
2 onion cut into cubes about the same size as the meat
4 tbsp red palm oil
juice of 1 lime
2 tsp curry powder (Middle Eastern style Curry Powder would be authentic)
salt and freshly-ground black pepper, to taste.

Method:

If using wooden or bamboo skewers soak in plenty of water for at least 2 hours (but best over night).

For the marinade, beat together the red palm oil, lime juice and curry powder. Blend in 2 tbsp water and season to taste with salt and black pepper.

Add the meat to a large bowl, pour over the marinade then massage into the meat with your fingers. Cover and set aside to marinate at room temperature for 2 hours.

In the meantime, pre-heat your barbecue.

Once the meat has marinated thread onto skewers alternating with the onion. Set the skewers on your barbecue and cook for about 10 minutes per side until nicely charred and cooked to your liking.

Serve on a bed of pounded banana pulp and accompany with hot sauce for dipping.
