Carne de Cebra Grealhado (Barbecued Goat Meat) is a traditional Guinean (from Guinea-Bissau) recipe for a classic dish of goat ribs that are barbecued and served fried with onions. Ingredients:
1kg goat ribs
goat fat
1 large onion, sliced into thin wedges
salt, to taste
Method:
Cut the goat ribs into pieces and season with the salt. Barbecue the ribs for about 10 minutes per side then place a cast iron skillet on the barbecue. When hot, melt the goat fat, add the onions and the goat ribs and cook for about 6 minutes, or until the onion is golden.
