Ingredients:

5 garlic cloves, minced
1 tsp ground cumin
pinch of saffron, crumbled
400ml coconut milk
1 large onion, thinly sliced
1kg king prawns, shelled
hot chilli powder, to taste
ground, dried, piri-piri chillies, to taste
1 green bell pepper
2 tbsp coriander leaves, finely chopped

Method:

Combine the onion, garlic and prawns in a pan. Scatter over the spices then pour in the coconut milk. Bring to a boil, reduce to a brisk simmer and cook for about 15 minutes or until the sauce has thickened.

Serve hot on a bed of rice.
