Ingredients:
1.2kg beef, cubed
5 onions, thinly sliced
6 garlic cloves
3 ripe tomatoes, chopped
3cm length ginger, grated
1 sprig thyme
salt and freshly-ground black pepper, to taste
oil for frying
Method:
Fry the beef in oil for a few minutes then add the onions, garlic and tomato. Cook for 4 minutes then add the ginger and thyme. Add water to cover, season with salt and pepper and simmer until all the water has evaporated.
