Cari de Thon (Tuna Curry) is a traditional Réunion recipe for a classic stew of tuna cooked in a tomato, onion and garlic base flavoured with ginger, chillies, turmeric, thyme and oyster sauce. Ingredients:
1.2kg tuna, cut into small pieces
6 small tomatoes, chopped
6 onions, chopped
6 garlic cloves
1 piece of ginger (about 3cm), peeled and chopped
chillies, to taste (finely chopped)
1/2 tsp ground turmeric
1/2 tsp thyme leaves
1 tbsp oyster sauce
salt, to taste
oil for frying
Method:
Crush together the garlic, ginger and chillies in a mortar with a little salt until you have a smooth paste.
Heat 4 tbsp oil in a pan and add the onions. Fry for about 4 minutes, or until soft then stir in the garlic, ginger and chilli mixture. Fry for 1 minute more, stirring constantly, then add the tomatoes, turmeric, oyster sauce and thyme.
Mix thoroughly to combine then add 250ml water. Bring to a simmer over medium heat and cook for 5 minutes. Gently stir in the tuna pieces then cover the pan and cook over medium heat for 15 minutes.
