Cari Boeuf Gingembre Oignons (Beef Curry with Ginger and Onions)
Cari Boeuf Gingembre Oignons (Beef Curry with Ginger and Onions) is a traditional Réunionnaise recipe for a classic curry of beef shank cooked in an onion and ginger base that's served garnished with spring onions. Ingredients:
1.2kg beef shank, finely chopped
6 small onions, chopped
3cm length of ginger, peeled and cut into julienne strips
1 bunch spring onions, finely chopped
salt and freshly-ground black pepper, to taste
oil for frying
Method:
Heat about 6 tbsp oil in a pan. Add the beef and fry for 10 minutes, stirring constantly.
At this point add the onions and ginger. Season to taste and cook for 15 minutes.
Turn into a serving dish, garnish with the spring onions and serve accompanied by white rice.
