Caprese Bites is a modern American recipe (based on an Italian original) for a classic party nibble of cherry tomatoes stuffed with Mozzarella cubes wrapped in basil, served drizzled with olive oil and balsamic vinegar. This recipe is a party snack version of the traditional Italian salad (from the island of Capri) of Insalata Caprese (Caprese Salad).
Ingredients:
300g cherry tomatoes
1 bunch fresh basil
240g Mozzarella cheese
1 tbsp olive oil
1 tsp balsamic vinegar
salt and freshly-ground black pepper, to taste
Method:
Cut the stem ends from the tops of the tomatoes then hollow out the pulp and seeds with a small spoon.
Cube the mozzarella cheese (these should be just large enough to fit in a tomato) then wrap each cube in a basil leaf. Stuff the basil-covered cheese into a tomato.
Arrange on a serving dish and drizzle over the olive oil and balsamic vinegar.
Season with salt and black pepper and serve immediately.
