This is a French recipe for pickled green elderberry fruit. They can be used in recipes the same way that you would use capers.

Ingredients:

500ml white wine vinegar
1 tsp sea salt
1 tsp black peppercorns
1 tsp mace
2 garlic cloves (chopped)
Green elderberry fruit (enough to fill two 250ml kilner screw-top jars)

Method:

Pick the unripe (green) elderberry fruit from their stems.

Combine the wine vinegar, salt, black peppercorns, garlic and mace in a small saucepan.

Bring the mixture to a boil, then reduce to a simmer and cook for 10 minutes. Take off the heat, add the green elderberries and allow sit for at least an hour until the mixture has cooled.

Remove the green elderberries with a slotted spoon and pack into jars. Now strain the vinegar through a sieve, to remove the spice ingredients, and pour into your jars until they are full, then cap.

You may start eating them within 24 hours, but it's best to leave them to mature for a month.
