Ingredients:
6 partly-ripe bananas, peeled
80g flaked coconut
1/2 tsp ground cinnamon
1/4 tsp salt
120ml golden syrup
60ml butter, melted
2 tsp freshly-grated lemon zest
60ml lemon juice
Method:
Arrange the bananas in a single layer in the base of a crockpot and sprinkle the coconut over the top. Mix all the remaining ingredients in a bowl then pour over the bananas. Cover and cook on low for about 90 minutes. Serve immediately.
