Camarão na Abóbora (Prawns in Pumpkin Shells) is a traditional Mozambican recipe for a classic dish of butternut squash stuffed with a stew of cheese, prawns and nuts in a coconut milk base. Camarão na Abóbora (Prawns in Pumpkin Shells): A Mozambican recipe for a dish of pumpkin shells stuffed with a mix of prawns with cheese in a coconut milk base.
Wrap the squash halves in kitchen foil then set on a baking tray, cut side down, and transfer to an oven pre-heated to 200°C and bake for about 20 minutes, or until tender and cooked through. Remove from the oven and set aside to cool.
Whilst the squashes cool, heat the olive oil in a pan. Add the garlic and onion and fry gently for about 4 minutes or until the onion is soft and translucent. Stir in the peeled prawns, crumble in the Maggi shrimp cube and fry until the prawns just begin to change colour. Now add the coconut milk, cashew nuts, parsley and paprika. Season to taste with salt and black pepper.
Mix the plain flour with 2 tbsp water to a smooth slurry. Mix in with the prawn mixture along with the goat's cheese. Heat gently until the cheese begins to melt and the sauce thickens.
Scoop out about half the flesh from the squashes and mix with the prawns. Stuff this mixture back into the squashes and scatter over the Mozzarella cheese then sit back on the baking tray.
Return to the oven and bake for about 20 minutes, or until the cheese has melted. Serve hot.
