Ingredients:

600g mixed fish pieces
100ml red palm oil (citi)
2 garlic cloves
2 onions, peeled and sliced into rings
1.5l water
salt and fresh chillies, pounded to a paste, to taste
90g rice

Method:

Wash the fish and cut into serving-sized pieces.

Pour the palm oil into a pan, bring to a boil then add the fish pieces, garlic clove and onions. Season to taste with salt and chilli paste.

Once the onions are beginning to brown (after about 6 minutes) add the fish pieces and fry for a few minutes, to just colour. Pour in the 1.5l water then bring to a boil. Reduce to a simmer and cook for 10 minutes, or until the fish is just tender.

Wash the rice and add to the pan. Continue cooking for about 25 minutes, or until the sauce has thickened and the rice is tender.

Serve hot.
