Caldeirada de Lulas a Madeirense (Madeira Squid Stew)
Caldeirada de Lulas a Madeirense (Madeira Squid Stew) is a traditional Portuguese recipe (from the island of Madeira) for a classic dish of stew of squid with potatoes in a tomato-based sauce flavoured with curry, ginger, bell peppers and chillies. This spicy squid stew comes from Portugal's Madeira islands.
Ingredients:
4 tbsp extra-virgin olive oil
2 onions, coarsely minced
2 garlic cloves, chopped
2 bell peppers, de-seeded and sliced into thin strips
2 small mild chillies, minced
1 tsp
curry powder
1/2 tsp grated ginger
2
bayleaves
1/2 tsp salt
2 fresh tomatoes,
blanched, peeled, de-seeded and minced
1kg squid, cleaned and cut into 6mm slices
250ml dry white wine
500ml
fish stock
2 potatoes, peeled and cut into julienne strips
fresh parsley, minced, to garnish
Method:
Heat the oil in a large, heavy-based saucepan, add the bell peppers and chillies and fry for 5 minutes, stirring frequently. Blend in the curry powder and the ginger and stir-fry for 2 minutes. Now add the bayleaves, salt and tomatoes. Bring the mixture to a boil then reduce to a very low heat. Cover and cook gently for 5 minutes.
Now stir in the squid along with the wine and stock. Bring the mixture to a boil, then reduce to a gentle simmer and cook gently, covered for 30 minutes.
After this time, when the squid is tender, add the potatoes. Continue cooking at a bare simmer for about 25 minutes or until the potatoes are quite tender. When ready to serve, ladle into flat soup bowls and garnish liberally with minced parsley. Serve hot accompanied by plenty of crusty bread, a green salad and a robust red wine.
