Cachupinha is a traditional Cape Verdean recipe for a classic stew of corn kernels with smoked sausage squash and broad (fava) beans in a tomato-based sauce. The full recipe is presented here and I hope you enjoy this classic Cape Verdean version of: Cachupinha.
Add the corn kernels into a pan. Meanwhile gently fry the onion, sausage and peppercorns in the olive oil. Add to the sweetcorn along with all the remaining ingredients and cover with water. Bring to a boil then reduce the heat and simmer for about 30 minutes, or until the vegetables have softened.
Season with salt, sprinkle with chopped coriander and serve.
