Cabbage and Potato Favourite: An Irish recipe for an accompaniment of potatoes layered with onions that are cooked in milk.
Ingredients:
750g cabbage (either white or green, or a mix), shredded
4 large potatoes, sliced thinly
2 onions, thinly sliced
250g rindless bacon rashers, diced
2 bayleaves
250ml milk
knob of butter
salt and freshly-ground black pepper, to taste
Method:
Layer the cabbage, onions, potatoes and bacon in an earthenware baking dish, ensuring that you finish with a layer of potatoes.
Add the bayleaves in the middle of the dish and season the layers thoroughly as you add them. Pour over the milk then cover the dish and place in a cold oven.
Set the oven to 220°C (Gas Mark 7) and cook for 60 minutes. At this point, dot the potatoes with butter and continue cooking, uncovered, for 15 minutes more, or until the tops of the potatoes are golden brown.
