Ingredients:
450g quick-cooking couscous
500ml boiling water (or chicken stock or vegetable stock)
2 tbsp butter
50g honey-roasted peanuts, chopped
2 tbsp fresh flat-leaf parsley, chopped
2 tbsp coriander leaves, chopped
salt and freshly-ground black pepper, to taste
Method:
Place the couscous in a large shallow dish (22x33cm) and add the boiling liquid. Cover tightly with aluminium foil and allow to rest for 10 minutes (up to 30). Fluff with a fork and season with salt and pepper.
