Igitoke is the Burundian name for the dish that is generally known as matoke in Central Africa. The dish is named after the matoke or East African Highland banana (Musa AAA-EA) cultivar which is eaten both green (unripe) and ripe. The dish is based on unripe bananas simmered with a blend of vegetables.

Igitoki, which means bananas in the Kinyarwanda language, is a recipe based on bananas and vegetables which comes to us from the land of a thousand hills (Rwanda), but which can also be found in other countries in the sub-region (Burundi, Uganda, etc.). Allow enough time to implement this fairly time-consuming recipe, in fact it takes approximately 30 minutes of preparation and 45 minutes of cooking.

This is a dish that is common to both Rwanda and Burundi

Ingredients:

2kg green East African Highland bananas, peeled and washed then cut into 3 pieces each
250g aubergines (or garden eggs), chopped
2.5kg of tomatoes, chopped
100g onions, chopped
150g peanut flour, or peanut paste
Salt, freshly-ground black pepper, and hot chilli powder, to taste

Method:

Mix together the banana pieces, aubergines, tomatoes and onions. Turn into a cooking pot and just cover with water.

Bring to a simmer, cover and cook for 40 minutes.

Mix the peanut flour with enough water to form a slurry then add this to the pot. Return to a simmer and continue cooking for 5 minutes.

Adjust the seasonings to taste and serve hot.
