Note that beef is not really eaten in Burundi and goat is by far the commonest meat. I will make this with goat, myself as I have easy access via the local Nigerian and Iranian shops. I've used beef here as it's more accessible to most in the West... just note that the use of beef is not authentic.
Ingredients:
palm oil to fry meat (or groundnut oil with
paprika for colour)
500g beef stewing steak (or chopped up goat leg)
250ml peanut butter
450g mixed greens (eg cassava leaves, sweet potato leaves, kale, collard greens, turnip greens, or similar) stems removed and cleaned
African
hot sauce
salt to taste
Method:
Add the greens to a pot with lots of water and bring the mixture to a boil. Fry the beef in the palm oil until browned on all sides then reduce the heat and add the peanut butter and greens mix. Simmer gently for an hour then drain the greens (reserve 400ml) and add to the beef.
Mix the 400ml reserved cooking water with the peanut butter and add to the beef. Add the spices and season then cook for 15 minutes to heat through. Serve with rice
