Buñuelos de yuca (Cassava Fritters) is a traditional Colombian recipe for a classic dessert or snack of sweetened cassava balls bound with egg yolks that are deep fried to cook and served drizzled with syrup. Buñuelos de yuca (Cassava Fritters): A Colombian recipe for a dessert or snack of sweetened cassava balls bound with egg yolks that are deep fried to cook and served drizzled with syrup.
Mash the boiled cassava until smooth. Add the eggs, sugar and salt and blend well to combine.
Shape the resultant mixture into balls (about 50g apiece) and chill in the refrigerator for at least 40 minutes.
Heat oil in a deep fryer, add the cassava balls a few at a time and fry until nicely browned all over. Mound on serving plates and serve (if desired you can drizzle them with syrup).
