Bulvinial Blynai (Lithuanian Potato Pancakes) is a traditional Lithuanian recipe for a classic thick pancake of a flour, grated flour, egg, plain flour and salt pancake coked in fat that's typically served with sour cream or apple sauce. Ingredients:
8 potatoes, peeled and grated
2 eggs
2 tbsp plain flour
1 tsp salt
1 tbsp bacon fat, lard or oil
Method:
Grate the potatoes into a bowl, add the eggs then season with the salt and mix in the flour.
Heat the fat or oil in a non-stick frying pan. Drop the potato batter into the pan by the tablespoon. Fry for about 3 minutes, or until golden brown on the base then flip over and cook on the other side.
Serve warm, accompanied by sour cream or apple sauce.
