This is a traditional Breton recipe that makes the most of the flavours of the first sardines of the season. It just so happens that the start of the sardine season coincides with new potato season so you can enjoy these springtime delights together. As the ingredients are so simple you really need a good quality butter to make the best of this recipe.
Ingredients:
12 fresh sardines
4 tbsp lightly-salted butter
600g new potatoes
salt and freshly-ground black pepper, to taste
Method:
Gut and scale the sardines the wash well and pat dry.
Scrape the potatoes in a bowl of water to remove the skins then place in a pan and cover with lightly-salted cold water. Bring to a boil and cook for 15-20 minutes, until just tender. When cooked the blade of a knife should sink easily into them.
Melt the butter in a large frying pan over medium-high heat. Once the butter is foaming, add the sardines and fry for 2-3 minutes per side, until just done through.
Once cooked, turn the potatoes into a colander. Drain then put in a bowl. Pour over the butter from the sardines and toss to coat. Season with salt and black pepper.
Serve the sardines accompanied by the buttered new potatoes.
