Le michon breton (Breton michon)

Breton Michon is a traditional, but not very well known Breton apple cake that’s really simple to prepare and ideal for last-minute baking.

Ingredients:

600g of apples
110g butter
125g of flour
70g powdered sugar
3 eggs
300ml of whole milk
1 tbsp of lambig (Breton cider brandy)
1 tbsp of apricot jam (to glaze)

Method:

Pre-heat your oven to 180°C (gas mark 6).

In a mixing bowl stir together the flour and 50g sugar. Now stir in the eggs, milk and 60g of melted and cooled butter. Set this mixture aside to rest.

Peel the apples and cut into thin wedges. Fry in a pan with 30g butter until nicely browned all over.

Butter a cake tin (a springform tin is ideal) then arrange the apple pieces over the base. Moisten with the lambig.

Cover the apples with the rested cake batter then transfer to your pre-heated oven. Bake the michon for 20 minutes. At this point spread the remaining butter over the top of the cake. Return to the oven and bake for 10 minutes more.

Take out of the oven allow to cool in the tin for 10 minutes then carefully remove from the tin. Sprinkle over 20g of sugar and allow this to melt for 5 minutes. Finally glaze the cake with a little apricot jam.
