Galette des rois (King Cake) is a classic French cake typically eaten on Epiphany (6th January) and celebrates the arrival of the three wise men in Bethlehem. The traditional cake is made with frangipane, but this is the Breton version and is very similar to Breton cake. Traditionally one or two little figurines or 'fèves' (beans) are hidden in the almond cream; whoever finds one of them will become the King or Queen for the day, and everyone else must obey their every whim! This Breton version maintains that tradition.

Ingredients:

250g of flour
125 g of powdered sugar
125g butter (take it out of the refrigerator 1 hour prior to baking to soften)
1 egg
1/2 tsp baking powder
1 tsp of salt
A little water
1 shot glass of milk

Method:

Begin by pre-heating your oven to 180°.

Crack the egg into a mixing bowl and beat lightly. Add the sugar and butter then cream together to combine. Now sift over the flour, baking powder and salt, blending to a smooth batter. If the mixture is a little thick, slacken with water.

Pour the batter into a greased and floured cake tin then slip a 'fève' into the batter. Draw small crosses over the top of the cake with the tines of a fork. Pour a little milk over the top of the batter then transfer to your pre-heated oven and bake for about 25 minutes, until the top is nicely browned and the cake is cooked through.

Allow to cool in the tin for 10 minutes then carefully turn out onto a wire rack to cool completely before serving.
