I love cherry clafoutis, and this version of Breton Far uses cherries substituted for the more usual prunes. However, apart from the choice of fruit this remains a traditional Far mixture.

Ingredients:

500g cherries
100g caster sugar
500ml of milk
120g of flour
4 eggs
3 tbsp of kirsch
pinch of salt

Method:

Pre-heat your oven to 180°C then pit the cherries.

In a mixing bowl combine the sugar, flour, milk, salt and eggs. Whisk to combine then add the kirsch. Mix everything together with a hand blender.

Arrange most of your cherries in the base of a cake tin or buttered baking dish. Pour over the batter then scatter the reserved cherries on top, pushing them down so they are just submerged.

Transfer the Far to your pre-heated oven and bake for 50 minutes, until the top is nicely coloured and the far is set.
