Ever since I encountered the use of coffee in Malagasy and Reunionaise cuisine I have been interested in the use of coffee as a spice. When combined with beef and/or game meat coffee, interestingly can make the meat taste even meatier. Here, brown sugar is added to the spice blend. This can significantly aid with the flavour, but as sugar burns easily over high heat you need to almost finish cooking the meat on your braai (barbecue) before tossing with the spice blend.
Ingredients:
For the Steaks:
6 sirloin steaks
olive oil and/or melted butter, for dressing (I like a half and half blend)
For the Spice Blend:
2 tbsp finely-ground coffee beans
2 tbsp dark brown sugar
1 tbsp sea salt
1 tbsp freshly-ground black pepper
1 tbsp ground coriander seeds
1 tsp hot chilli powder
1 tsp mustard powder
1 tsp ground ginger
1 tsp dried oregano
Method:
You need a very hot bar barbecue for grilling steaks successfully. As the barbecue is getting ready, mix all the spice ingredients in a bowl.
Place the steaks over the hot coals and cook for 2 ½ minutes per side, making sure you turn only once. After this time, liberally season all the steaks on both sides with the spice blend. Return to the braai and cook for 2 minutes more on each side.
Take off the heat and drizzle with the blend of olive oil and melted butter. Allow the steaks to rest for a few minutes, carve into strips and serve.
