Bolo de Laranja (Orange Cake): A Brazilian recipe for a classic orange-flavoured cake made from an egg, sugar, orange juice and flour batter cooke in a loaf tin, shown cut into slices.

Ingredients:

4 eggs, separated
1 tsp baking powder
400g sugar
250ml orange juice
250g plain flour

Method:

In a bowl beat the egg yolks with the sugar until thick and creamy. Add the egg whites to a clean and dry bowl and beat until they stand in soft peaks.

Fold the egg whites into the egg yolks mixture. In a separate bowl, mix together the flour and orange juice. Add the baking powder and beat then fold in the egg and sugar mixture.

Turn the batter into a greased and floured loaf tin. Transfer to an oven pre-heated to 180°C and bake for about 40 minutes, or until well risen and golden brown on top.

Allow to cool in the tin for 10 minutes then turn out onto a wire rack and allow to cool completely before slicing and serving.
