A granita is very similar to a sorbet in terms of how it's made, except that it's made by hand and scraped rather than churned during the freezing process so that it freezes in large scale-like pieces and it's these that are served.

Ingredients:

600ml water
450g sugar
1.2l blood orange juice
juice of 1 lemon

Method:

Add the sugar and water to a pan. Heat gently until sugar has dissolved then bring to a boil and immediately remove from the heat. Allow to cool completely then sieve-in the orange and lemon juices. Mix to combine then pour into a freezing tray and place in a freezer.

As the granita freezes, break it up every 30 minutes or so with a fork, until you have a big pile of crystals. Transfer these to a lidded container and store in the freezer. This granita will keep for at least a week and should be served in frozen glasses.
