Blueberry Laddoo

This is a modern fusion version of traditional Indian laddoos, meant for serving at Diwali.
Ingredients:
400g (2 cups) frozen blueberries, thawed
190g (2 cups) desiccated coconut
200ml (Half 14 oz tin) condensed milk
1/2 tsp ground cardamom
95g (1 cup) desiccated coconut, extra, to roll the ladoos (optional)
Method:
Place the thawed blueberries in a food processor and blitz until you have a smooth blueberry puree. Turn into a bowl and set aside.
Place a large frying pan over low heat and add the 190g (6 2/3 oz) coconut. Fry, stirring continuously, until the coconut is toasted but not coloured. Stir in the condensed milk, followed by the blueberry puree and stir to combine. Cook, stirring constantly, for about 5 minutes or until the mixture leaves the sides of the pan. At this point stir in the ground cardamom.
Take the pan off the heat and set aside to cool. Once cooled, make lemon-sized balls out of the mixture. If desired, place 95g (3 ½ oz) coconut on a plate. Roll the ladoos in coconut until they are covered in coconut.
Arrange decoratively on a plate and serve.
