This recipe is an interesting twist on the traditional Louisiana Cajun blackened fish in that the fish is cooked on a barbecue rather than being pan fried, as in the traditional recipe.

Ingredients:

4 white fish fillets
1 tbsp paprika
1 tsp dried thyme
1 tsp cayenne pepper
1 tsp freshly-ground black pepper
1/2 tsp ground white pepper
1/2 tsp salt
1/4 tsp ground allspice
50g unsalted butter
3 tbsp sunflower oil

Method:

Rinse the fish, then pat dry with kitchen paper.

In a shallow dish, mix together the paprika, thyme, cayenne pepper, black pepper, white pepper, salt and allspice.

Combine the butter and oil in a small pan and heat, stirring occasionally, until the butter melts. Take off the heat, then liberally brush this mixture over the fish.
Dip the fish into the spice mixture, ensuring that its liberally coated all over.

Place the fish on your pre-heated barbecue over hot coals and cook for about 10 minutes per side, turning half way through. Continue to baste the fish with the remaining butter mixture as it cooks.

Serve hot, accompanied by a roasted bell pepper salad.
