Mali borders Algeria to the north and this recipe uses the classic Algerian combination of carrots and cumin to prepare soft, savoury, French style biscuits (cookies). So, although the recipe is Malian, it could just as easily be termed Fusion food.

Ingredients:

200g carrots, scraped and grated
180g plain flour
100g freshly-grated Parmesan cheese
1 egg
2 tbsp olive oil
1 tbsp ground cumin seeds
whole cumin seeds, to garnish

Method:

Combine the carrots, flour, cheese, egg, oil and ground cumin in a bowl. Beat well with a wooden spoon to forma soft dough. Arrange this dough on a sheet of clingfilm (plastic wrap) then roll into a firm sausage shape. Transfer to the freezer and chill for 30 minutes.

After this time, remove from the freezer, unwrap the dough and use a sharp knife to cut into slices about 1cm thick. Arrange the slices on a baking tray lined with parchment paper.

Gently press a few cumin seeds into the top of each one then transfer to an oven pre-heated to 180°C and bake for about 10 minutes, or until lightly browned and cooked through.

Remove from the oven and allow to cool on the baking tray for 10 minutes then transfer to a wire rack. Allow to cool completely before storing in an air-tight container or serving.

If stored, they will typically keep for between 2 and 3 days.
