Melt the butter in a frying pan and add the onions. Fry for 1 minute before adding the mushrooms. Continue cooking until the onions are soft then set aside to cool completely. Once cold add the fried onions and all the other ingredients to a food processor.
Blend to a smooth paste, place in ramekins and put in the fridge to set. Serve topped with thin slices of biltong and watercress and accompany with toast.
