Bigilla (Broad Bean Dip)

Ingredients:

450g dried broad (fava) beans
2 sprigs of parsley, finely chopped
1 head of garlic, crushed
1 chilli, finely chopped
dash of Tabasco sauce (or any hot pepper sauce)
2 tsp fresh marjoram, finely chopped
2 tsp fresh mint, finely chopped
2 tbsp extra-virgin olive oil

Method:

Wash the beans, place in a large bowl then cover with water and set aside to soak over night. The following morning drain the beans, place in a pan then cover with plenty of lightly-salted water. Bring to a boil, reduce to a simmer and cook for about 80 minutes, or until tender (the exact cooking time will depend on the age of your beans). Drain the beans, mash lightly then turn into a serving dish.

Stir in the parsley, garlic, chill and Tabasco sauce then pour the olive oil over the top. Mix thoroughly to combine then smooth the top. Garnish with the marjoram and mint then serve.
