Bermuda Salmon

Ingredients:

4 salmon steaks (about 900g)
1 1/2 tsp salt
1/4 tsp freshly-ground black pepper
2 tbsp lemon juice
3 tbsp olive oil
1 large Bermuda onion, finely sliced

Method:

Wash the salmon then pat dry. Season with the salt and black pepper then set in a baking dish and sprinkle with the lemon juice and olive oil. Spread the onion slices evenly over the top then cover and set aside to marinate for 60 minutes.

At the end of this time discard discard the onion then arrange the fish on a grilling (broiling) pan. Place on a hot grill and cook, turning once, until well browned on both sides and cooked through (about 16 minutes). Serve hot.
