Benne is a West African name for sesame seeds and variants of these sesame-based biscuits are found throughout Africa. They are also common in the American South. They are commonly made as biscuits, with a large amount of sugar. This recipe, however, is a personal variant that's more like a cracker and is designed to go with cheese.
Ingredients:
100g brown sugar
60g butter
1 large egg, beaten
90g plain flour
1/8 tsp
baking powder
1/4 tsp salt
200g
sesame seeds
1 tsp lemon juice
1/2 tsp vanilla extract
Method:
Cream together the brown sugar and butter in a large bowl until light and fluffy. Sir-in the egg, flour, baking powder and salt. Cream together then add the sesame seeds, lemon juice and vanilla.
Grease a baking tray and scoop rounded teaspoons full of the batter and drop these onto the baking tray, making sure that each teaspoon full is spaced some 5cm apart.
Place in an oven pre-heated to 170°C (150°C/325°/Gas Mark 3) and bake until the wafers are brown around the edges (about 15 minutes). Transfer the wafers to a cooling rack using a spatula and allow to cool completely.
