Sauce d'Arachide (Beninese Peanut Sauce)

Sauce d'Arachide () is a traditional Beninese recipe for a classic dish of a peanut butter sauce flavoured with onions, chillies and tomatoes that's used as an accompaniment to starch-based staples. Ingredients:

3 tbsp oil
2 tbsp tomato puree
2 tsp piment (Scotch bonnet chillies pounded to a paste in a pestle and mortar)
1/2 tsp salt
1 Maggi (or beef bouillon) cube
120ml peanut butter (smooth, unsweetened)
150g diced onion

Method:

Add the oil to a pan, heat and use it to fry the piment, onion, tomato puree and Maggi cube. Cook until the onion softens then add the peanut butter and about 250ml water. Mix well and slowly bring to a boil. Reduce to a simmer, cover, and cook for about 15 minutes.

Serve the sauce with cooked white sweet potatoes. This also makes an excellent sauce to accompany Ingame.
