Belgian Slice: Classic British recipe for a square sponge cake flavoured with spices that's iced (frosted) before serving shown sliced into fingers and arranged piled on a plate.

Ingredients:

120g butter
120g sugar
1 egg
1 tbsp golden syrup (corn syrup)
2 tsp ground cinnamon
2 tsp mixed spice (pumpkin pie spice)
1 tsp baking powder
300g plain flour

Method:

Cream together the butter and sugar until pale and creamy. Add the egg and beat well to incorporate. Mix-in the golden syrup then mix all the dry ingredients together and sift into the egg mixture, beating well to ensure it's all incorporated.

Press the mixture into a well-greased square tin and place in an oven pre-heated to 170°C (325°F/Gas Mark 3) and bake for 20–25 minutes. Allow to cool then tip out and ice with white icing.
