Beans Gravy is a traditional Liberian recipe for a classic dish of cooked beans with meat cooked in palm oil with onions and hot chillies. The full recipe is presented here and I hope you enjoy this classic Liberian version of: Beans Gravy.

Ingredients:
300g beans
250ml palm oil
1 large onion
4 garlic cloves, chopped
1 small tin tomato paste
6 hot chilli peppers, pounded to a paste
2 Maggi cubes or chicken bouillon cubes with a pinch of cumin and coriander
500g assorted meat cut into serving pieces
Method:
Soak the beans over night then drain and place in a saucepan. Cover with water and boil for at least 90 minutes, or until they are easy to mash. Drain the beans and mash half of them to a paste.
Pour the palm oil into a deep pan and add the meat. Fry until browned on all sides then fry the onion until translucent then add the tomato paste, chillies and bouillon cubes. Reduce to a simmer and continue cooking until the meat is tender then add the beans (both mashed and un-mashed) and about 500ml water. Continue boiling the mixture until all the water has evaporated.
