Barra Dulse

This seaweed breakfast from the Isle of Barra essentially uses dulse as a bacon substitute. After boiling, you can either chop finely or leave as more bacon-like strips before frying.

Ingredients:

300g dulse
salt and freshly-ground black pepper, to taste
3 tbsp butter

Method:

Wash the dulse thoroughly in plenty of fresh water. Trim any frayed ends then place in a pan with about 6 tbsp water, bring to a simmer, cover and cook for about 40 minutes, or until tender.

Drain the dulse and either leave as bacon-like strands or chop into little pieces. Melt the butter in a pan, add the dulse and fry gently until heated through. Season to taste with salt and black pepper then serve accompanied by boiled potatoes.
