This is an excellent way of cooking gooseneck barnacles, as the barnacle’s natural briny marries well with the smokiness from the charcoal. Though gooseneck or goose barnacles are typically associated with Spain, they're also eaten in Cape Verde and this recipe is from the USA for the Pacific goose barnacle Pollicipes elegans.

Ingredients:

500g goose barnacles
4 tbsp unsalted butter, melted
2 garlic cloves garlic, minced
1 tbsp olive oil
½ tsp sea salt
¼ tsp freshly-ground black pepper
1 lemon (cut into wedges)

Method:

Pre-heat your barbecue to medium-high heat.

To prepare the barnacles, gently scrub any debris or dirt off the barnacles under cold running water. Remove any visible impurities using a soft brush.

In a small bowl, mix together the melted butter, garlic, olive oil, salt, and black pepper.

Arrange the barnacles directly on the barbecue then brush with garlic butter.

Cook for 3-4 minutes per side until slightly charred.

Serve hot with a squeeze of lemon.
