Barbecued Garlic Potato Wedges: Classic British recipe for a barbecue accompaniment of potatoes parboiled and finished by being dressed with herbed garlic oil and cooked on a barbecue grill" height="364" width="400" title="Barbecued Garlic Potato Wedges a barbecue recipe from Britain.
Ingredients:
3 large baking potatoes, scrubbed clean
4 tbsp olive oil
25g butter
2 garlic cloves, chopped
1 tbsp fresh rosemary, finely chopped
1 tbsp fresh parsley, finely chopped
1 tbsp fresh thyme, finely chopped
salt and freshly-ground black pepper, to taste
Method:
Bring a large pan of water to a boil. Add the potatoes and parboil for 10 minutes then drain in a colander and refresh under plenty of cold, running, water, to prevent any further cooking. Set aside to drain thoroughly.
When the potatoes are completely cold and dry cut into thick wedges (do not remove the skins).
Heat together the oil and butter in a small pan then add the garlic. Cook gently for about 2 minutes, or until the garlic begins to brown then take the pan off the heat.
Stir the herbs and black pepper into the oil and butter mix. Use this mixture to brush liberally over the potatoes.
Arrange the potatoes on an oiled barbecue rack set over hot coals. Cook for between 10 and 15 minutes, brushing liberally with the remaining oil and herb mix, until the potatoes are tender and crisped on the outside.
Transfer the potatoes to a warmed dish and serve either as a starter or as an accompaniment.
