Barbecued Duckling: Classic British recipe for a barbecue dish of duckling breasts in an oriental marinade that are cooked over hot coals.

Ingredients:

3 garlic cloves, crushed
150ml light soy sauce
5 tsp light muscovado sugar
3cm piece of root ginger, grated
1 tbsp fresh coriander (cilantro), chopped
1 tsp Chinese five-spice powder
4 duckling breasts
sprigs of fresh coriander, to garnish

Method:

For the marinade, mix together the garlic, soy sauce, sugar, ginger, chopped coriander leaves and Chinese-five spice powder in a small bowl. Whisk to combine, then arrange the duckling breasts in a shallow, non-reactive, dish and pour over the marinade. Turn the duckling breasts to coat in the marinade.

Cover the dish with clingfilm (plastic wrap) then set aside to marinate for between 1 and 6 hours, turning the duckling several times during this period, or until all the marinade has been absorbed.

Remove the duckling breasts from the marinade (reserve the marinade). Place the duckling on a greased barbecue rack over hot coals and cook for between 20 and 30 minutes, turning the breasts frequently and brushing with the reserved marinade during this time.

Cut the duckling breasts into slices and transfer to warmed serving plates.

Serve immediately, garnished with sprigs of fresh coriander.
