I love my catfish and in the American South they know how to prepare it. I stumbled across this barbecue recipe by accident, but now it's a firm favourite.

Ingredients:

4 catfish fillets (about 200g each)
1 tsp lemon-pepper seasoning
1 tsp Creole Seasoning
1 tsp freshly-ground white pepper
1 tsp Cajun blackening spices
2 tbsp lemon juice
oil for brushing
lemon wedges, to accompany

Method:

Combine the lemon-pepper, Creole seasoning, white pepper and Cajun blackening spices in a bowl. Season the catfish fillets with lemon juice then coat with the seasoning blend.

Take a fish basket and brush with olive oil. Set the catfish fillets inside and cook on a barbecue over medium coals for about 7 to 10 minutes, turning half way, or until the fish is cooked through and flakes easily with a fork.

Serve immediately.
