This is a classic Bulgarian breakfast dish made by layering a mixture of beaten egg whites and sirene (a type of white cheese) between sheets of filo pastry before baking in the oven. Typically it is served accompanied by plain yoghurt.
Ingredients:
12 sheets of filo pastry
melted butter or oil for brushing
For the Filling:
4 eggs
pinch of baking soda
250g sirene (a white Feta-like cheese) grated or crumbled
Method:
Beat together the eggs and baking soda in a bowl then work in the grated or crumbled cheese.
Grease the base of your baking dish with oil or melted butter. Take three of the filo pastry sheets and brush with melted butter. Arrange the sheets, one on top of the other, in the base of the baking dish. Spread 1/3 of the cheese filling over the top then brush two more filo sheets and arrange on top.
Now add another 1/3 of the filling and tow more filo sheets brushed with butter. Top with the remaining cheese and egg mix then cover with the three remaining filo pastry sheets (again brushed with melted butter.
Transfer to an oven pre-heated to 180°C and bake for about 20 to 25 minutes, or until the pastry is golden and flaky and the filling is cooked (a wooden skewer inserted into the centre should emerge cleanly).
