Banana Cheesecake is a modern American recipe for a classic cheesecake with a biscuit (cookie) crumb crust topped with a cream cheese, yoghurt, banana and egg filling sweetened with honey. The full recipe is presented here and I hope you enjoy this classic American version of: Banana Cheesecake.

Ingredients:
1 25cm diameter Graham Cracker Cheesecake Crust
360g cream cheese (or you can use my home-made cream cheese recipe to prepare your own)
360ml plain yoghurt
500ml puréed bananas (about 4 medium bananas)
2 eggs (optional)
60ml runny honey (optional)
Combine all the remaining ingredients in a blender and process until smooth and creamy. Pour into the pre-baked pie crust then return to the oven (pre-heated to 170°C) and bake for 40 minutes, or until set. Remove from the oven and set aside on a wire rack to cool for 5 minutes before loosening the rim. Allow to cool completely to room temperature before removing the rim then transfer to a refrigerator and chill for at least 3 hours before serving.
If desired, you can decorate by topping with a layer of plain yoghurt and sliced strawberries and bananas.
