Banana Akara

In most of West Africa, akara refers to bean fritters, in Sierra Leone, however, the word refers to fritters in general, with a more specific epithet referring to the type. These banana fritters are typically served for breakfast.

Ingredients:

4 medium over-ripe bananas
160g (5 1/2 oz) rice flour
1 heaped tsp baking powder
1/2-1 tsp freshly-grated nutmeg
A pinch of salt
3 tbsp sugar
2-4 tbsp water
Oil for deep frying

Method:

Peel the bananas, then either chop, place in a bowl and mash to a purée or put in a food processor and whizz until smooth.

Transfer the puréed banana to a bowl and mix in all the ingredients plus 2 tbsp of water. The resulting batter should have a dropping consistency but if not then mix in the remaining 2 tbsp of water.

Place a wok or deep pan over medium heat. Add oil to a depth of 3cm (1 in) and allow to warm up. When the oil is hot, drop tablespoons full of the batter into the oil.

Cook the akara for 1 minute then flip then over with a slotted spoon and cook on the other side for another minute, until golden brown.

Remove the akara with a spider or slotted spoon and drain them on paper towels. Continue until all the batter is done.

Serve with some gravy or sweet chilli sauce.
