Baked Snapper is a traditional Bahamian recipe for a classic dish of red snapper fillet basted with butter and served with an onion, breadcrumb and tomato puree sauce. The full recipe is presented here and I hope you enjoy this classic Bahamian version of: Baked Snapper.

Ingredients:
1/4 tsp thyme
1 large onion, chopped
300g breadcrumbs
salt and black pepper, to taste
2 tbsp tomato puree
1 snapper fillet (about 1.6kg)
225g butter, melted
Method:
Place the fish in a shallow baking pan that's been well greased. Base with half the melted butter then season with the thyme, salt and black pepper. Cover and place in an oven pre-heated to 180°C and bake for 1 hour, basting occasionally.
Meanwhile, add the remaining butter to a large pan and when melted stir-in the remaining ingredients. When the fish has cooked for 1 hour pour the bread sauce over the top then return to the oven and cook (uncovered) for 20 minutes. Serve hot.
