Baked Butternut Squash with Cranberries: An American recipe for a vegetarian Christmas accompaniment of baked and mashed butternut squash mixed with cranberries and flavoured with herbs and spices.

Ingredients:

1 medium butternut squash, peeled and cubed
1/2 red onion, sliced into thin wedges
75g dried cranberries
1 tbsp olive oil
dried sage, crumbled (to taste)
sprigs of fresh thyme
pinch of ground cinnamon
4 tbsp cranberry juice
salt and freshly ground black pepper, to taste

Method:

Combine the squash and onion in a bowl. Drizzle over 1 tbsp olive oil and toss to combine then season to taste with the sage, salt and black pepper.

Mix in the cranberries and thyme then turn the mixture into a baking dish. Transfer to an oven pre-heated to 170°C and bake for 60 minutes.

Drizzle over the cranberry juice, return to the oven and bake for a further 15 minutes.

This accompaniment can be served either warm or cold.
