This is the traditional Bajan (from Barbados) fresh spice blend (a mix of chillies, herbs and spices) rendered to a paste. This is the flavour base for many curries and is also used as a rub for chicken and pork. The recipe yields enough to coat one chicken. It is also known as Bajan seasoning or Bajan marinade.
Ingredients:
2 scotch bonnet chillies de-stemmed and chopped
6 spring onions, (including the green tops), chopped
3 garlic cloves, chopped
2 tbsp fresh parsley, chopped
1 tbsp fresh ginger, minced
1⁄2 tsp ground cloves
1⁄4 tsp ground cumin
1 tsp freshly-ground black pepper
2 tbsp freshly-squeezed lime juice
2 tbsp vegetable oil
Method:
Combine all the ingredients in a blender or food processor and pulse to chop.
Once the ingredients are finely chopped run the motor to puree to a paste, adding more oil as needed to make the process easier.
If desired, scrape the puree into a sterilized jar and store in the refrigerator.
