Bajan Green Seasoning

Green seasonings is classic feature of many Caribbean cuisines and this is the version prepared and used in Barbados.

Ingredients:

1 Onion, chopped
small bunch of Spring onions, white and green parts, chopped
2 Garlic cloves, peeled
1 red Chilli, stems removed (Scotch Bonnet/Habanero if available)
1 tbsp Thyme, leaves stripped
1 tbsp flat-leaf Parsley, chopped
1 tbsp fresh Marjoram, chopped
100ml White Wine Vinegar
juice of 1 Lime
1 tsp Curry powder
generous pinch of ground Allspice
generous pinch of freshly-ground Black Pepper
1 tbsp Sea salt

Method:

Chop the onion, spring onions, garlic and chilli together very finely. Use a food processor if available.

Add the herbs, vinegar and lime juice and mix thoroughly together. Stir in the remaining ingredients.

Cover and store.

Ideally, Bajan seasoning should be stored in the refrigerator for a week before use so that the flavours can mature.

It will keep in the refrigerator for six months or can be frozen in an ice cube tray lined with clingfilm and stored in the freezer.
