This is a classic home-style curry powder from island of Barbados. It's a fairly simple curry powder, with the fenugreek leaves providing the curry flavour. The only bone of contention is the chilli powder used. I would always use dried scotch bonnet or habanero myself, but if you don't particularly like the heat you can substitute anything down to cayenne pepper. Also, if you particularly like a red-coloured curry add 1 tbsp of Kashmiri chilli powder for colour. Note that Madras curry powder is also popular in Barbados so you could use a commercial or home-made preparation of that.
Dry fry the whole spices in a pan over medium heat for 1 minute, stirring all the time. Turn out onto a plate and allow to cool completely.
Combine all the spices in a spice or coffee grinder and render to a fine powder. Transfer to a jar, seal the lid and store in a cool cupboard for up to 2 months.
